Mostaccioli. (Italian Christmas cookies)

One of my favorite Italian Christmas cookies is The “Mostaccioli”. It is a relatively low fat, cakey type cookie, that is fabulous dipped in cafe latte.  I like to ice them with a mixture of melted dark chocolate and butter. They are perfect for that period between The large Christmas breakfast, and the ginormous Christmas  turkey dinner, when one is just a wee bit peckish! Here is the recipe,, and a couple of glamour shots…

3 cups of All Purpose Flour

1-1/4 cups of Granulated Sugar

1/2 cup of Warm Water

1 tsp of Baking Powder

1/2 tsp of Baking Soda

1/2 tsp of Ground Cinnamon

1/4 tsp of Ground Cloves

1/4 tsp of Ground Nutmeg

1 Packet of Italian Vanilla or 1 tsp of Vanilla Extract

Zest and Juice of One Orange

Zest and Juice of 1/2 Lemon

Dash of Orange extract

1/2 cup chopped walnuts, or for more pronounced flavor, pine nuts

Mix everything in a large bowl to combine. 3-4 minutes should do it, in say, a Kitchenaid mixer. Bake at 350 for 10-12 minutes.

For the Chocolate glaze:

2 cups of Semisweet Chocolate Chips

2 tsp of melted butter
