Recently, I was reading something a colleague of mine wrote about Valentine’s day. In it she had talked about the types of flowers that one MUST give on said day. She was of the mindset that she would actually prefer anything, other than the traditional V- day flower of choice: Red roses. I am in total agreement with her. Men cannot redeem themselves in one day, for their multiple year-long shortcomings. C’mon dudes, you can’t git ‘r done on Feb14th alone, you have to spread the wealth throughout the year. That being said , as a pastry chef, we also cannot make up in one day, what we have failed to deliver the rest of the year. Nevertheless, we have an out: Chocolate, with a capital “C”! If you love chocolate , as I do, and you love to love the look of ecstasy on a woman’s face when she really likes chocolate……You just can’t help making things with it. Just ask Jacques Torres if women love chocolate! He has made a career out of designing and assembling works of art, using chocolate as a medium. Phenomenal. With that in mind, I submit my entry for this year. It is a quadruple chocolate cheesecake heart. It is actually a component for a really pretty dessert plate , I used to make a few years back. The item begins with a chocolate cookie bottom, it is then topped with a layer of raspberry jam. Onto this is placed a dark chocolate cheesecake heart. Once applied, the heart is then dipped in dark chocolate ganache, and allowed to set. More ganache is then cooled and whipped till the consistency of creme chantilly. This whipped ganache is then piped onto the coated heart with the inscription of your choice: “Ti amo” fits very nicely, and it lets her know just how you feel…..Trust me it’ll work. It may not undo a year’s worth of you know what, but it’ll sure set the tone for the evening!!
