Recycling. With old pastries..

 Our little shop  of weight gain has on some days,  leftover “VIENNOISERIES”,  breakfast pastries, if you will….I like to fashion  a bread pudding of sorts, with lots more ooomph.  I start with my croissant scraps, and a leftover Panettone that I have cut into manageable- size pieces.  ( If this is for a dinner party , say, I would recommend slicing the items to be “puddingized”,  into slices and arranged in the baking dish, less haphazardly! )  IMAG0024IMAG0024IMAG0024To  the stale croissant/bread/old pastry dry portion you will add:    

  • 2.5 quarts of whole milk
  • 1 lb 2 ozs white gran. sugar
  • 1 oz vanilla
  • 20 eggs
  • a pinch of salt.

Calculate the  above measurements for every 2lbs 3 ozs of stale mixture.  Liberally coat your baking vessels with pan spray…325F  for 30-40 minutes, till set, like pudding. You may have to cover the product for the last 10mins or so of the bake.
