Spelt/Walnut chocolate chunk cookies

I had a bar of 72% chocolate sitting around the kitchen. Somehow, it didn’t end up in the vat of chocolate mousse that I whipped up, earlier in the week. Sometimes, in the evening, I will help myself to a coupla cookies with my Greek yogurt, when I’m feeling a bit peckish. The recipe is an eggless one. Not a big deal, I’d rather save my eggs for breakfast, or more mousse!  It is very straightforward, doesn’t even require a mixer. Here is the recipe:

250g Spelt or Kamut flour

75g alnut crumbs

25g milled flaxseed

2 tsps baking powder

1/2 tsp soda

2 pinches of salt

1/8 tsp nutmeg

1 tsp cinnamon

100g Xylitol or brown sugar

Combine, and blend the dries well. To these add: 150g cold, cubed butter. Mix with your hands, or use a pastry cutter, to create a coarse bread-crumb like mixture. To the mixture add: 1/4 cup applesauce, a splash of vanilla, and 100g coarsly chopped chocolate. mix until a dough is formed. drop half dollar-sized chunks onto a cookie sheet. I baked the cookies for 13 minutes @ 375F. They are nice and not too crumbly. Very cookie-like, very nice with a cuppa joe, or with a spot o tea, (UK version). Enjoy. The spices are a personal choice, not a necessary component. You could also use a different type  of flour. Go gluten free, and use sorghum or brown rice flour, if you like.
