Gluten free buckwheat flax waffles

Supper, seeing as I made some pizza last night, was a hastily cobbled GF batch of waffles…I love waffles, I love making different kinds of waffles…These were pretty tasty, as it was a cold, blustery day, that demanded comfort food..Here is the recipe:

 

100g organic Buckwheat flour

25g milled flax

1 tsp baking powder

1 tsp Stevia or Xylitol, or if you just can’t stomach it: Turbinado sugar.

pinch sea salt

Blend well, and add:

2 eggs, beaten

150g buttermilk

50g H2O

25g melted butter

1/2 cup wild blueberries

______________________________________________________________________

Allow the mixture to sit for about an hour, in the fridge. I made a sugar free sauteed apple mixture to spoon over the top, and smeared a layer of Greek yogurt between each waffle…They were VERY comforting, and elicited moans of delight, from my dinner companion.

  1. Yummy! Comfort… That’s what we need in bleak days, and to enjoy something good (for you) to eat with someone you love is a sure way to feel cheered.
